When kids are active, one thing is inevitable – they get hungry!

To help, here are a few easy recipes for your family to enjoy after bike riding. VEGEMITE Cheese Bites anyone?

VEGEMITE Cheese Bites

Prep time: 15 minutes
Cook time: 20 minutes
Makes: 20 Cheese Bites

Ingredients
  • 225g fresh mozzarella cheese
  • 1 cup plain flour
  • 1 egg
  • 1 cup Italian style breadcrumbs
  • 5 tsp VEGEMITE in a piping bag
  • Chives
  • Dried basil
  • Parsley
Instructions

In three shallow dishes place: flour, egg (whisked) and in the third dish the breadcrumbs. Cut the mozzarella cheese into bite sized pieces. Toss Cheese Bites in flour, shake off excess – line on tray facing up. With the piping bag, add 1/4 tsp of VEGEMITE on the top of each bite. Dip each bite in the eggs and then in bread crumb mixture. Heat vegetable oil to 175°C, once oil is to temperature carefully place mozzarella bites in the pot and cook until golden brown. Drain on paper towels. Enjoy!

VEGEMITE Bolognese

Prep time: 20 minutes
Cook time: 60 minutes
Makes: Four servings

Ingredients
  • 2 garlic cloves, crushed
  • 1 onion, finely chopped
  • 2 sprigs fresh rosemary, chopped
  • 6 rashers free-range, smoked-streaky bacon, chopped
  • Olive oil, to taste
  • 500g minced beef
  • 1 tbsp VEGEMITE or Gluten Free VEGEMITE
  • 1 small tub sun-dried tomatoes, blitzed in a food processor
  • 2 x 400g tins of cherry tomatoes
  • Dash balsamic vinegar
  • 1 packet of spaghetti or gluten free spaghetti
  • Parmesan cheese, to taste
  • Black pepper, to taste
Instructions

In a large fry pan, sauté off the onion in olive oil until it is soft. Add in the garlic and the smoky bacon and sauté until the fat starts to render. Add in the rosemary, beef mince and cook until browned. Add in the balsamic vinegar, VEGEMITE, blitzed sun-dried tomatoes and canned tomatoes. Simmer for one hour until the sauce is rich and delicious. Season at this point (the sauce may not need much seasoning due to the saltiness of the bacon and VEGEMITE). Serve with al dente Spaghetti and a generous sprinkle of freshly grated parmesan and black pepper. Enjoy!

NOTE: To make this recipe gluten free don’t forget to use Gluten Free Vegemite and gluten free pasta!

VEGEMITE & Cheese Toastie

Prep time: 5 minutes
Cook time: 10-15 minutes
Makes: 1 toastie

Ingredients
  • 1 loaf white bread – unsliced
  • 40g Grated Tasty Cheese
  • 50g Grated Mozzarella Cheese
  • 5g mayonnaise
  • 5g butter
  • 5g VEGEMITE
Instructions

Hand slice the loaf into two thick slices (thicker than store bought). Coat one side of the bread in butter and VEGEMITE. Coat the other side in Mayonnaise. With mayonnaise face down, place the grated cheese(s) on top of the VEGEMITE. Heat fry pan on medium to low setting. Place the slices of bread mayonnaise side down in the fry pan. Cook until the cheese begins to melt. Place one side on top of the other to close the sandwich. Keep turning on each side until golden brown and the cheese has melted. Enjoy!
